Veggie pot pie, oatmeal cookie smoothie, and veggie white bean hash....YUM!

Ok so since my last post I have tried my hand at happy herbivores Veggie biscuit pot pie, her Oatmeal Cookie Smoothie, Forks over Knives Veggie White bean hash, and even made my own hydrating workout smoothie.  So yummy!

The HH (happy herbivore) veggie pot pie is ok but as is to plain for me so I added ALOT of spices to make it to my liking.
Now HH's Oatmeal Cookie Smoothie......OMGEEEeeeee so good, I did have to add more liquid because my blender is not very powerful (I just added extra water). 






Tonight for dinner I made the Veggie White bean hash from Forks over Knives.  DELICIOUS!

 For my after workout smoothie today I may a Hydrating chia smoothie.
I had some watermelon ice cubes blended up with coconut water and lime juice from last week so I used about 2 cups of those
2 cups watermelon cubes
1 banana
1 peeled or organic cucumber
1 cup almond milk
1 TBsp chia seeds
Sweetener of choice or some pitted dates for sweetness
Tasty, hydrating, full of fiber and protein! YUM!

Cauliflower Buffalo Bites---Omni man approved

So today I didn't do great on staying on track for making my excessive fats and oils like butter but I did stay on a vegetarian diet. 

Breakfast
    Oatmeal made with almond milk, creamy peanut butter, and caramel sugar free syrup

Exercise time
     walked/jogged 2 miles on the treadmill for a total time of 40 mins <--eventually I hope to increase my time running vs. walking but just starting out.

Lunch
      Fried mushrooms with ranch dressing from Zaxby's ---> like I said not perfect on the oils/fats but work in progress.

Dinner
       Cauliflower Buffalo Bite:  Original Recipe---> theleancleaneatingmachine.com/2014/02/02/cauliflower-buffalo-bites/  the only differences between this recipe and my recipe is I used 2- 12oz bags of frozen thawed cauliflower.  Also I used 1 cup of almond flour and roughly 1/2-3/4 cups of water as well as Ms.Dash seasoning.  
       I loved this recipe and my guy who is atm an omni said this is guy approved he liked it a lot. :-)

Meal plan for the week and progress

Yesterday my guy did a little mini photo-shoot with me LOL.....I was just so excited because I am seeing a big difference in myself all the way around.  I am more self confident, my pants are fitting better or even loose in some cases, I feel healthy, and so happy!  It has only been 3 weeks since being on my journey but to see this much progress already is so wonderful. :-D

I just finished making my meal plan for the week, tracking it all in my sparkpeople tracker.....I highly recommend sparkpeople.com not only can you track fitness and nutrition they also have health minded groups there.  I think of sparkpeople as a facebook for those wanting to get healthy and loose or maintain weight. Hey all; Long time no speak!

I know it has been a long time and I apologize for that......but I am back at it and I promise I will try to post at least a little something daily if not here than definitely to my facebook group.  Feel free to join, it is a closed group to help others feel more safe to share.   https://www.facebook.com/groups/gettinghealthywithbrenda/

It is about the journey not perfection. I started my journey on June 29, 2014 so I am very new at this. I was a vegetarian before I moved to Atlanta, GA 4 yrs ago but not vegan. I was a pescatarian because I did occasionally eat fish. When moving here to live with my SO I started eating whatever I wanted which included LOTS of junk food. With that came a good 50-70 lbs, low self-esteem, depression, and lots of other bad things.

Anyways I decided I am taking back control of my life!


Just in the few short weeks I have been vegetarian/vegan (not 100% vegan yet) I feel so great even my SO says he can tell a difference in me.  The only reason I am not 100% vegan yet is because I am a firm believer in using what you have in the pantry first, but I don't have to eat any of the meats in my freezer because my SO has no problems with that.....getting him to at least even try one of my vegetarian or vegan meals is another story LOL.
